Part of the Fairmont family, this modern luxury hotel on West Georgia Street, doesn’t disappoint
ABOUT
The castle in the city as it is colloquially known is centrally located on West Georgia Street in downtown Vancouver. Expect the traditional and historic decor Fairmont is renowned for, but experienced through a modern prism like lighting fixtures resembling feathers, and large airy walkways. Guest rooms will be getting a refresh through May 2017.
THE ROOM
From our deluxe room, we watch as storm clouds circle, though not enough to dampen the sparkle of the city lights. The spacious, 500 square foot modern room is accented by chrome light fixtures, and muted tones of puce and pale teal.
DINING
Hotel food can be bland and forgetful. Not here, one of the best updates to this property is Notch 8 restaurant. Paying homage to 1930s travel (complete with banquettes, nods to art deco and gold flourishes), including Fairmont’s ties to Canadian Pacific Railway, the restaurant excels at West Coast cool. The menu ranges from casual choices (scotch egg, cured olives, oysters on the half shell) to updated classics (dungeness mac and cheese, beef wellington with sauce bordelaise), and artful modern fare (herb roasted cauliflower with cashew basil cream, B.C. hot pot). Don’t leave without ordering a round of prohibition style cocktails at the glittering bar like the citrusy, floral lavender corpse reviver, or the refreshing vodka based moneypenny’s vesper. End your meal with a slice of
chocolate torte.
EXTRAS
Love shopping? You don’t even have to leave the premises to find those slick black tie Dior sunglasses, or swanky wonderland ranger boots at Louis Vuitton with these two stand alone stores located within the hotel. Animal lovers will be keen to learn that the hotel has canine pet ambassadors to welcome guests.
