Classic | Lemon Ice

Ingredients

2 cups (500 ml) water

1/3 cup (75 ml) fresh lemon juice

1 tablespoon (15 ml)chopped mint Mint simple syrup to taste (recipe follows)

Mint sprigs to garnish

Mint Simple Syrup

1 cup (250 ml) granulated sugar

1 cup (250 ml) water

2 tablespoons (30 ml) chopped mint

Add sugar, water and mint to a saucepan on medium heat. Stir to dissolve sugar and let come to a boil. Reduce heat to simmer and let cook for 3 minutes. Cool completely and strain. Set aside.

Directions

1. Add water, lemon juice and chopped mint to large cup or medium-sized bowl; sweeten to taste with mint simple syrup

2. Pour into 2-inch deep baking pan and place in the freezer

3. Let freeze for 30 – 40 minutes or until set but not completely hardened. Using a fork, scrape ice; scoop servings with spoon, garnish with sprigs of mint and serve.
