HOW TO: Goat Cheese Flower Rounds
Place the goat cheese in plastic wrap. Roll into a cylinder shape and refrigerate for at least 20 minutes. Cut into rounds. Decorate with edible flowers and herbs.
For a party: Pair with a fresh salad, and a slice of grilled toast, as a first course.
For a picnic: Goat cheese rounds make a great addition to a large, sharing, cheese platter.
For Dessert: Make smaller rounds and serve alongside baked figs, drizzled with honey and sprinkled with nuts.

A NOTE ON FLOWERS: Flowers and herbs have long been used as a way to preserve food by preventing oxidation. Not only are these blooms pretty, but also are rich in antioxidants and polyphenols and protect against inflammation. Be sure to do your research though, as not all flowers are edible.

1 HERBS
Bright green herbs add a colourful flair. Flat leaf parsley, chives, thyme and oregano impart a ton of flavour to the cheese.

2 NASTURTIUM
This easy to grow annual adds a peppery bite with bright yellow, orange or red blooms. Leaves are also edible.

3 PURPLE PANSY
This pretty tri-colour bloom has two side petals and a bottom petal with a small ‘eye’ with a mild sweet grassy flavour.

4 BLUE BORAGE
This is a favourite of chefs around the world for its unique blue-purple colour that pops on a plate. These tiny flowers impart cucumber freshness.
