A refreshing and easy to make spritzer with zesty, floral flavours.
1 cup water
½ cup lemon juice
1 cup sugar
1 sprig thyme plus 1 teaspoon for garnish
2 cups club soda or sparkling water
4 lemon slices
To make a simple syrup, in a pan over high heat, stir water and sugar until mixture boils and sugar is dissolved, about 5 minutes. Add the sprig of thyme and let cool. Cover and chill, at least 2 hours. Once chilled, discard the thyme. Pour a half portion of simple syrup and a quarter portion of lemon juice into each glass, then fill to rim with club soda. Garnish with lemon slices and thyme.
