Ondarre Cheese Factory | Segura
The Goiburu Murua family are award-winning Idiazabal DO cheesemakers in the beautiful Segura countryside. Visit the farm and museum to see traditional at work and to learn about the native latxa sheep, whose milk is used for the famous cheese. The nutty, creamy sheep cheese pairs well with quince cheese and cider.

Sagardoa Route
Travel along the Sagardoa cider route, the heart of Basque culture, and learn about traditional cider making. Cider houses usually serve a typical menu of: omelette, cod, grilled T-bone steak, and for dessert, cheese with quince jelly and walnuts. And, of course, delicious cider (the real fun is the txotx, where guests line up with glasses to catch the cider as it spouts straight from the barrel).

Be transported back in time at this 16th century farm cellar and cider house in Ezkio bidea. Learn about rural life and see a working traditional cider press (during cider week in October) using Jenga-like wooden beams to squeeze apples and extract the juice.

Tximista Sagardotegia
Owner Aitor Esnaola Gaztañaga and his daughters, welcome guests to their cider house in Ordizia named after the Basque word for lightning (tximista). The classic experience including tasting cider straight from the barrels, accompanied by a hearty meal (seriously, bring an extra stomach) including cod omelette, chunks of cod in caramelized onions and txuleta (steak), followed by delicious cakes and cheese. Every now and then, local guests may burst into traditional song, adding authenticity and spark to the experience.

Generous, warm multi-hyphenates (owners, chef and cider makers) Maite Retolaza Ojanguren and Haritz Eguren Urrestarazu, host guests at this agroturismo in Zerain. Their natural cider is made using one hundred per cent organic native apples. Be sure to taste, Markesaren Lurra, an organic ecological cider made with txalaka, gezamiña, and urtebi wild apple varieties. Maite is an excellent chef as evidenced by her lovely stewed vegetables in tomato sauce, perfectly cooked cod and incredible omelette. The husband-and-wife pair love experimenting with new styles like exquisite iced cider made with errezil apples.
