How to Make A Protein Packed Pesto


Instead of the usual nuts, seeds, rich in protein (think, chia and hemp), give this pesto a creamy and thick body.

Serves 1
Prep Time: 10 minutes

INGREDIENTS
1 cup packed fresh basil leaves rinsed and dried (40g)

½ cup Bobs Red Mill Hulled Hemp Seed (75g)

¼ cup NOW Real Food Organic whole white chia seeds (30g)

½ cup grated Parmesan cheese (40g)

2 cloves garlic minced (6g)

½ tsp salt (3g)

¼ cup extra virgin olive oil (55g)

METHOD
Combine basil, hemp seed hearts, chia, parmesan cheese, garlic and salt in a food processor or blender and begin pureeing.

Slowly stream in olive oil and allow to mix until a smooth paste has formed, about 2 – 3 minutes.

Store, chilled, for up to 1 week.

Serve on pasta, rice, cold salads, or as a spread or dip.
