Combine 1 cup ricotta cheese with equal part all-purpose flour, 3 whole eggs, 3 tablespoons of granulated sugar, 2 teaspoons baking powder, zest of ½ an orange and 1 teaspoon vanilla. Deep fry and drain well. Still hot, in a bowl with ½ cup icing sugar, toss to coat thoroughly.
