Try this easy twist to Traditional Tzatziki


A wonderful accompaniment to a variety of Cypriot dishes.

pikantiko tzatziki
Serves 10.

INGREDIENTS
500 g (2 ¼ cups) Greek yogurt

a pinch of ground cumin

pinch of sugar

3 lemons

1 tablespoon chilli/chili paste*

plenty of salt and freshly ground black pepper

* To make a chilli/chili paste, if not using store-bought, finely chop 1 fresh red chilli/chile, dust it in salt then using the flat side of a knife, scrape it into a paste and mix it with a tablespoon of olive oil.

METHOD
To make the Fiery Tzatziki, mix the Greek yogurt with the cumin, sugar and a pinch of salt.

Halve one of the lemons and squeeze a teaspoon or so of lemon juice into the yogurt and mix thoroughly.

Swirl in the chilli paste. Serve on the side for people to help themselves to, along with the remaining lemons cut into wedges for squeezing.
