Don Melchor Cabernet Sauvignon (Chile, 2021)
Consistency is key. This critic favourite has received acclaim for 35 years and for good reason. Luscious blackcurrant and plum, gentle pepper and hints of tea give way to soft, rounded tannins for a long finish on the palate.
Pairings: Puttanesca, venison Wellington, eggplant parmesan.
Joseph Phelps Cabernet Sauvignon (Napa Valley, 2021)
This classic, expressive and vibrant red, is full of ripe currant contrasted with the depth of dark chocolate and echoes of tobacco and leather. The fleshy full-bodied structure is layered with spicy and savoury notes and good acidity.
Pairings: Manchego Hasselback potatoes, chocolate lava cake.
