This classic rum cocktail highlights the freshness of mint.
6 tablespoons (3 ounces) freshly squeezed lime juice
12 teaspoons (2 ounces) granulated sugar
8-10 fresh sprigs of mint, plus more for garnish
¾ cup (6 ounces) white rum
3 cups (750 ml) ice
6 tablespoons (3 ounce) club soda
1 Place the lime juice, sprigs of mint and sugar into a highball glass. Muddle or mash the mint using a muddler or the handle of a wooden spoon to release the flavour.
2 Add rum and stir well. Pour into glass filled with ice and top with club soda.
3 Garnish with sprigs of mint.
