Longaví GLUP Chenin Blanc
A collaboration between Chilean and South African winemakers, Longaví GLUP Chenin Blanc from the Maule Valley, Chile, is a lovely bright golden sipper with grapefruit and lemon tang seamlessly integrated orchard fruit (quince, baked apple) with delicate chamomile floral notes. Made with old vine grapes, and given oxidative handling (wine is exposed to air), this wine has distinctive savoury depth.
Pair Chenin Blanc With
Whipped Feta and Corn Dip – partly elote-inspired, its got just a hint of spice, and a hint of cheese. The sweetness of the corn is balanced with the dry minerality of the wine.
For the Corn Dip:
In a skillet, heat 1/2 Tbsp oil. Add 1/2 small white onion, diced, 2-3 corn, cobbed and 1/2 red pepper, diced until softened. Add 1/4 tsp cayenne and salt to taste. Sauté until translucent. Finish by sprinkling with 1/4 cup chopped cilantro (optional). Cool.
How to Make the Whipped Feta and Corn dip
For the Whipped Feta:
Crumble 1/2 cup feta, 3 Tbsp cottage cheese, 2 tablespoons yogurt or sour cream, 1 tsp. olive oil, and zest of 1/2 lemon into bowl. Use a stick blender and pulse until creamy.
For Presentation:
Smear whipped feta on the bottom of a plate, top with corn. Squeeze with lime juice (optional) and serve with pita or tortilla chips.
