THE MEXICAN DRINK PANTRY
Refreshingly intense, complex and exotic.
Tajin
This Mexican seasoning powder consisting of dehydrated lime, chilli powder, salt and chilli pepper, is addictive! Use to rim the glass.
Hot sauce
A few dashes of spicy and acidic Tapatio (we equally love Cholula), is a great addition to Bloody Mary’s.
Tamarind
An intensely sour fruit, usually made into a paste, it adds tartness, to help balance flavours.
Mexican lime
Smaller in size than those grown in the US, the juicy and floral citrus is used to brighten everything including cocktails.
Behind the Smoke
A spin on the classic margarita, this cocktail balances sourness with a hint of smoke.
1½ oz Mezcal
Squeeze of lime juice
½ oz simple syrup
½ tsp Tamarind Paste
Dash of grenadine (for colour)
In a shaker, combine all ingredients, ice, in a Boston Shaker. Pour into an old fashioned glass and garnish the rim with tajin, and slice of lime.
