Rich holiday meals call for equally special wine. Traditional side dishes to
perfectly roasted meat and indulgent luscious gravy need bottles that are
both versatile and memorable. Here are a few of CSL’s recommendations
for your next festive feasts.

Escorihuela ‘1884’ Estate Grown Malbec
Juicy, full and complex.  Aromas of blackberries, plum, with oak aging that provides spice and toast.  Succulent fruit balanced by balsamic, mocha and mixed spice characteristics. Roasted game meat or grilled mushrooms would be a great accompaniment.

Errazuriz Aconcagua Alto Carmenère
An elegant expression of this varietal with complex black fruit, coffee, pepper and herbal notes.  Polished, with good structure, fruit forward with hints of spice and silky tannins ensuring a long finish best suited for smoked meat and hard cheese.

Bodega Volcanes de Chile ‘Parinacota’ Syrah-Carignan
A blend of 70% Syrah and 30% Carignan (from 100 year old vines), and named after the volcano in the north of Chile.  Intensely purple and bursting with black and berry fruit, rhubarb and black tea with balanced acidity, structure and length.  Best with slow roasted, stewed meat.

Chateaux Trignon Côtes du Rhône Roussanne
Honeyed flavours of apple, pear and tangerine with hints of acidity to allow the rich texture of the wine to pervade on the tongue. This full bodied white though dry, integrates spice and nuts and is a treat when paired with spicy, Asian dishes (think five spice duck).

Karrawatta Dairy Block Shiraz, Adelaide Hills
Benefiting from afternoon sun, a sole block of Shiraz was selectively picked for this ripe and juicy beauty.  Aged for 18 months in 30% new French oak, the medium bodied stunner shows concentrated spice, cherry and plum with velvety tannins, great with braised meat or duck.

Clarendelle, Saint-Emilion ‘inspired by Haut-Brion’ A classic Bordeaux blend of 77% merlot, 16% cabernet franc, 7% cabernet sauvignon showcasing beautiful balance between ripe fruit, tannin and oak.  Brilliant red in colour, the nose full of black fruit carries on the palate with pepper and spice with fin tannins and long finish.  Excellent with fatty foods like terrine, or rich Comté cheese.
