Add a twist to the traditional, with juicy ripe peaches
3 large ripe peaches (if fresh peaches are not available, use ¾ cup peach juice)
⅓ cup fresh lime juice
7 ounces vodka
1½ cups ginger beer soda
1 cup ice
If using fresh peaches make the juice by cutting and pitting peaches, reserving a few slices for garnish. Place in blender, add a small quantity of water and blend until smooth. Strain puree.
To make the cocktail, combine peach juice, and lime juice with vodka in an ice filled shaker. Pour into 4 glasses filled with ice, and top with ginger beer. Garnish with peach slice.
